We played with this design for quite some time before settling on the DHF Boning/Fillet knife hybrid. It's a perfect compromise between flex and rigidity. You may notice that we have increased the blade length to 7" over our previous 4.5" design. Chefs and consulting partners agreed the added length was necessary for handling larger cuts of meat and spanning the width of larger fish.
AEB-L HC stainless steel allows DHF to design the blade with both high Rockwell hardness abilities and corrosion resistance. This gives the user high performance without the additional maintenance required from pure carbon steel. AEB-L is arguably the nicest culinary stainless steel available today.
